How are you guys doing? It's a bummer that Summer 2018 is coming to an end! As we all begin to embrace the return of back-to-school, the Pumpkin Spice lattes from Starbucks(Which returns at the end of August!)  and the color changes with the leaves. I have 11 vegan food dishes that you HAVE TO try before the summer comes to a complete end.

1. Cucumber Sesame Salad

This salad recipe is so easy to recreate with its vibrant flavors and crunchy textures. I love making this easy dish because I can dish it up and head to class at a short notice. All you need is seedless cucumbers, carrots, this dressing recipe and your mouth watering taste buds!

2. Hawaiian Sloppy Joes

This crowd favorite is made with mushrooms, lentils, and you guess it...PINEAPPLES! This meal is full of flavor and easy to make for friends and family.

3. One-Pot Lemon Pasta

This dish is easy to recreate for college students. Forget the need of multiple pots and pans. You only need one pot, spaghetti, common spices, vegan parmesan, spinach and vegetable broth. Combine all the ingredients and 15 minutes later, dinner is served!

4. Sweet Potato and Portobello Tacos

Save your Chiplote money and take a crack at this recipe! Using sweet potato, portobello mushroom, jalapenos and a selective spice mix. This recipe will have you spending the last days of summer with a nice cold Corona in hand.

5. Avocado Mango Summer Rolls with Peanut Sauce

These spring rolls are perfect for the end of summer! Made with yummy avocado, sweet mango, and refreshing cucumber; paired with a home-made peanut sauce. Takes only 20 minutes to assemble.

6. Summer Corn Chowder

Made with fresh sweet corn, carrots, and another favorite vegetable. This chowder is dairy free, gluten free and vegan. The cream is replaced with coconut milk. So delicious !

Another one of my favorite recipes! I remember in college during test week, I didn't have but 15 minutes to cook dinner. This Lemon Basil Pasta is quick, easy, and a healthy meal. Made with delicious cherry tomatoes, fresh basil, garlic and zesty lemon.

10. Watermelon and Cucumber Salad

The fresh salad is filled with delicious summer flavors such as cucumber, fresh basil, hot jalapeno pepper and sweet seedless watermelon. This summer classic is perfect for a "between classes" snack!

11. Chia Seed Lemon Pancakes
